Tips to keep you food safe on a picnic

·       Plan ahead: decide what to eat, how to cook it and what equipment your need.Try to plan just the right amount of perishable foods (meat, poultry, eggs, seafood, salads) to take so you won't have to worry about keeping leftovers safe.

·       After estimating the amount of food that needs to be kept cold, pack perishable foods directly from the refrigerator or freezer into an insulated cooler with sufficient ice or gel packs to keep the food at 40 °F (4.4 °C). Why? Bacteria grow and multiply rapidly in the danger zone between 40 °F (4.4 °C) and 140 °F (60 °C). Food transported without an ice source or left out in the sun won't stay safe long.

·       Don't put the cooler in the trunk; carry it inside the air-conditioned car. At the picnic or while hiking, keep the cooler in the shade. Keep the lid closed and avoid repeated openings. Replenish the ice if it melts.
