                                                   Makes trans-fatty acids have no place to hide

Chemical principle for plant butter (also known as margarine or Hydrogenated oil) is to add metal catalyst and hydrogen when heating vegetable oil to let the grease change from fluid to semisolid. Solid margarine is easy to be stored than fluid vegetable oil and cheaper than animal fat, with longer expiry time and better flavor , it’s quite popular in daily life. Almost 95% of the fast food, cake, and bread contain margarine. However, trans-fatty acids will be produced in hydrogenation process which is not necessary nutrient for human body and hard to be metabolized. From medical research, overdose of trans-fatty acids will cause diabetes; it can be transferred from placenta and breast milk to infant and to affect development of retina, central nervous system, and brain function. Meanwhile development of verve and reproductive systems will also be affected; male hormone secretion will be reduced to further inhibit children’s natural development. In 2007, it was discovered by a research of Public Sanitation College from Howard University that trans-fatty acids is closely related to heart disease risk and cardiovascular disease morbidity rate.

Recently, many European countries have started to regulate the content of trans-fatty acids in food; each fat content is required to be clearly stated in the nutrition label on food package. From June 1st 2003, Denmark started to prohibit any fat with trans-fatty acids higher than 2%. Canada and Brazil require that the content of trans-fatty acids needs to be stated in the label if it is higher than 0.5g for all food varieties. And countries like Holland, France, Sweden, etc strictly regulate content of trans fatty acids in food should be less than 5%; and the content information of saturated fat and trans fatty acids should be marked in the nutrition label on the package. Since July 1st 2007, all the restaurants in New York have stopped using cooking oil which have trans-fatty acids contained; and one year later, all of the foods containing trans fatty acids were forced out from New York. Generally speaking, it’s safe for human body if the intake of trans-fatty acids is less than 2% of the whole energy according to FDA and WHO researches. In March 2010 that trans-fatty acids should be less than 3% of total fatty acids in follow-up infant and young children formulas. This is the first time for China to have trans-fatty acids test method in dairy products standard. However, there is still no clear statement of trans-fatty acids in the food label as no regulation or requirement on this. Trans-fatty acids even have different beautiful names in the market such as refined vegetable oil, vegetable milk, vegetable shortening, hydrogenated soybean oil, and so on.                  

With the newest National Standard and international top-grade equipment (GC-FID), headed by professional technical experts, we should try to test fatty-acids in food to make the trans-fatty acids have no place to hide by analyzing the contents of each fatty acids including trans fatty acids, saturated fatty acids, monounsaturated fatty-acids and polyunsaturated fatty acids.
